Transcarpathian cooking without the ethnographic masquerade. Suppliers come from within seventy kilometres, the wine from local vineyards, mushrooms and herbs are brought by the same people as ten years ago. The menu is written weekly from whatever arrives in the morning.

Suppliers were found on foot: we drove the villages within seventy kilometres and made deals in kitchens, not over the phone. Half of those people still deliver.
